Marine Valence, cheesemaking consultant and trainer

More than twenty years in cheesemaking, from farmhouse producers to industrial plants. I had the good fortune to be trained at ENILBIO by Bernard Mietton, a reference in French cheese technology. Today I devote myself to teaching and supporting cheesemakers, with two aims that never change: quality, and passing on what I know.

An unusual path, and that is precisely what helps

I did not follow a straight line inside one company. I have worked with different milks, in operations of every size, with equipment ranging from a two-hundred-litre vat to an industrial plant. That is exactly what allows me today to walk into any dairy and understand quickly how it works.

My training at ENILBIO, the French national school of dairy industry and biotechnology in Poligny, with Bernard Mietton, gave me the theoretical foundations: what really happens in a vat, why a curd behaves the way it does, how a surface flora establishes itself. Fieldwork did the rest.

A producer with a recurring defect does not need a lecture. They need someone to watch their make, ask the right questions, and hand them back control of their product. That is the work I do.

Skills and technical scope

Technologies

Soft cheeses with bloomy and washed rinds, uncooked and cooked pressed cheeses, lactic technologies, fresh cheeses. Cow, sheep and goat milk, raw or thermised.

Beyond the vat

Designing premises and forward flow, food safety management plans and HACCP, in-house controls, running drying rooms and cellars, yield calculation, equipment specifications, and training teams.

The company

Marine Valence Conseil

Marine Valence Conseil is a French simplified joint-stock company with a sole shareholder (SASU), founded in January 2024 and based in Hélette, in the inland Basque Country. The business covers two inseparable strands: consulting and technical expertise on one side, training activities on the other.

As a training provider, the company is Qualiopi-certified for training activities, under certificate no. 23FOR02042 issued by Qualitia Certification. Its training activity is registered under no. 75640577964 with the prefect of the Nouvelle-Aquitaine region.

Being based in the Basque Country does not limit the working area: I travel throughout France, and trips are arranged quickly, including when a make goes wrong and someone needs to come fast.
