Lactic technology applied to goat's milk: controlling acidification, draining, drying and the defects that commonly appear. For goat farmers processing on the farm as much as for established dairies.
Running the drying room and the cellar: humidity, temperature, ventilation, surface flora, care and turning. Correcting ripening accidents and building a consistent flavour profile.
Food safety management plan, forward flow, cleaning and disinfection, in-house controls and handling non-conformities. Facing an inspection calmly and securing raw-milk production.
The course takes place on your equipment, with your milk and your recipes. It is the most effective format: what is learned in the morning is applied in the afternoon on your own make.
The content is built after an initial conversation about your objectives, your level and your production constraints. Days can be grouped together or spread across the year as part of ongoing support.
Qualiopi is the French national quality certification for training providers. It has been granted for the following category: training activities. Certificate no. 23FOR02042, issued by Qualitia Certification. Training activity registration no. 75640577964 with the prefect of the Nouvelle-Aquitaine region. This registration does not constitute State approval.
Qualiopi certification allows your training to be paid for by a French vocational training fund. Which one depends on your status: farmer, employee or company owner.

These schemes are French. If you are based outside France, training is arranged by direct quotation.
No. Programmes are built from your actual level, from a complete beginner retraining into the trade to an experienced cheesemaker trying to correct one specific defect. That is exactly what the initial conversation is for.
Yes. A significant share of the people I train are adults retraining and preparing to set up. In that case the training covers cheese technology as much as whether their future workshop is realistic.
Usually in your own dairy, on your equipment and with your milk. That is what makes the learning immediately applicable. Training at another site is possible depending on the project.
Courses are delivered in French. If you need training in English, write to me and describe your situation: I will tell you honestly what is feasible, and whether an interpreter would be needed.
